French Fried Chicken Recipe

Recipe

  • 2 pound(s) chicken pieces
  • 1/4 cup(s) Grace White Vinegar
  • 5 cup(s) water
  • 2 stalk(s) escallion, chopped
  • 1 medium onion, chopped
  • 4 clove(s) garlic, chopped
  • 1 1/2 teaspoon(s) scotch bonnet pepper, chopped
  • 2 sprig(s) thyme
  • 1/2 teaspoon(s) salt
  • 1 tablespoon(s) Grace Caribbean Traditions All Purpose Seasoning
  • 1 tablespoon(s) Grace Chicken Seasoning
  • 2 cup(s) Grace Vegetable Oil
  • COATING:
  • 1/2 cup(s) flour
  • 1 teaspoon(s) baking powder
  • 1/2 teaspoon(s) Grace Caribbean Traditions Black Pepper
  • 1 packet(s) Grace Pimento, Ginger and Garlic Seasoning
  • 1/4 teaspoon(s) salt
  • SAUCE:
  • 1 cup(s) Grace Pineapple Juice
  • 1 cup(s) chicken stock*
  • 1 piece(s) ginger, grated
  • 1/2 cup(s) Grace Tomato Ketchup
  • 1 cup(s) Grace Pineapple slices, diced

Fried Chicken Directions

  1. Clean chicken in a mixture of Grace White Vinegar and 4 cups water.
  2. Blend the next eight ingredients with the remaining 1 cup water.  Pour the marinade over the chicken, rub in and leave chicken to marinate for 2 hours or overnight.
  3. Place chicken pieces along with the marinade in a heated heavy bottom skillet.  Cover and simmer over medium heat for 30 minutes.
  4. Combine flour, baking powder, black pepper, Grace Pimento, Ginger and Garlic Seasoning and salt in a bowl and mix well.
  5. Remove skillet from flame; drain chicken pieces from the seasoned liquid and coat in the flour mixture.
  6. Heat Grace Vegetable Oil in a skillet and use to fry the coated chicken pieces until golden brown; drain on absorbent paper.
  7. Combine Grace Pineapple Juice, en-GBchicken stock, ginger, ketchup and the diced Grace Pineapple Slices in a saucepan over medium flame.  Bring to a boil, lower flame and cook for about 15 minutes.
